The Best Chocolate Mousse!

This is a great dessert that is sure to dazzle the taste buds almost as much as your Pepper Tree Seasonings dish. This is definitely a good paring with beef: Serves 6 to 8 people.







Kitchen Tools:

3 court mixing bowl (metal or ceramic)

A wire whisk or electric beater

A small sauce pan

A pan with slightly simmering water

A pot of cold water



4 egg yolks (separate egg whites and save)

3/4 c. Baker's sugar (ultra-fine ground)

1/4 c. orange liqueur

6 oz. of semi-sweet chocolate

4 Tbsp. of strongly brewed coffee

6 ounces of softened unsalted butter

A pinch of salt

1 Tbsp. granulated sugar


Step 1:

Beat the egg yolks and baker's sugar together until the mixture is thick and folds back on itself in a slowly dissolving ribbon. Beat in the orange liqueur. Then set mixing bowl in the lightly simmering water and continue to beat in at least 3 minutes until the mixture is foamy and slightly too hot to touch. The beat over cold water for another 3-4 minutes until it cools and forms ribbons again. 


Step 2:

Melt chocolate and coffee over hot water in the sauce pan. Remove from heat and beat in the butter a little at a time, making a smooth cream. Beat the chocolate into the egg yolk and sugar. 


Step 3:

Beat the egg whites and salt until soft peaks are formed. Then sprinkle in the sugar and beat until stiff peaks are formed.  Stir 1/4 of the egg whites into the chocolate mixture and then fold in the rest. 


Step 4:

Gently place into serving cups and refrigerate for at least 3 hours.
